Ingredients

Quantity Ingredient
2 tablespoons groundnut or flavourless oil
3 cm piece peeled fresh ginger, finely chopped
a small handful coriander stalks, finely chopped
1 red chilli, deseeded and finely sliced, or more to taste
4 large heads bok choy, quartered lengthways
2 tablespoons mirin
120ml chicken or vegetable stock
A splash soy sauce, or more to taste
sesame oil, for drizzling

Method

  1. Heat the oil in a frying pan or wok over a high heat. Add the ginger, coriander stalks and chilli, and stir-fry for 1 minute. Add the bok choy and cook until starting to soften, then add the mirin, stock and soy. Cook until the bok choy is tender but still retains some bite. Transfer to a serving bowl and drizzle with sesame oil. Serve immediately.
