Ingredients

Quantity Ingredient
6 medium tomatoes, halved
3 garlic cloves, crushed
a large handful basil
3 tablespoons olive oil
sea salt flakes
freshly ground black pepper

Method

  1. Preheat the oven to 170°C. Place the tomatoes in a baking tray. Mix all the other ingredients together in a screw-top jar then pour the mixture over the tomatoes and toss them in it. Arrange in the tray cut-side down and roast for 1–1½ hours, depending on ripeness and size. They should be very soft and wrinkled when done. Serve hot or cold.
