Ingredients

Quantity Ingredient
2 tablespoons mayonnaise
2 tablespoons creme fraiche
1/2 garlic clove, crushed
5 basil leaves, finely sliced
sea salt flakes
freshly ground black pepper
3 large romaine lettuce, halved lengthways
olive oil, for brushing
3 eggs, hard-boiled
3 tablespoons toasted hazelnuts, chopped

Method

  1. For the dressing, place the mayonnaise, crème fraîche, garlic, basil, salt and pepper and a splash of water in a screw-top jar and shake vigorously. Add more water to loosen if needed. Set aside. Heat a griddle pan over a high heat. Brush the cut-side of the lettuce with olive oil and griddle cut-side down until charred and slightly wilted. Flip and briefly cook the other side – the lettuce should still be firm at the centre. Transfer to a serving plate, drizzle with dressing and top with egg. Drizzle over more dressing and scatter with the hazelnuts to serve.
