Ingredients

Quantity Ingredient
200g aubergine, cut into 2cm cubes
1/2 teaspoon fine sea salt
2 tablespoons olive oil
3 garlic cloves, chopped
1/2 red onion, chopped
150g red pepper, chopped into 2cm chunks
sea salt flakes
freshly ground black pepper

Method

  1. Preheat the oven to 220°C. Place the aubergine in a colander set over a bowl, toss with the salt and drain for 30 minutes. Pat dry, place in a baking tray lined with baking paper and toss with half the oil. Roast for 15 minutes, or until tender. Heat the remaining oil in a frying pan and fry the garlic and onion until golden. Add the tomatoes, chilli and garam masala and cook for 2 minutes. Stir in the pepper, aubergine, 50ml water and salt and pepper. Cover and cook for 30 minutes, or until tender, adding more water if it dries out.
