Ingredients

Quantity Ingredient
300g acorn squash, peeled, deseeded and diced small
4 tablespoons olive oil
sea salt flakes
freshly ground black pepper
150g swiss chard, sliced
4 eggs, lightly beaten
200g cooked black, green or puy lentils
100g feta cheese, crumbled

Method

  1. Preheat the oven to 200°C. Place the squash in a baking tray, toss with 1 tablespoon of oil and season. Roast for 30 minutes, or until tender. Heat 1 tablespoon of oil in a 20cm frying pan and fry the Swiss chard with salt and pepper. Transfer to a bowl, leave to cool slightly, then stir in the remaining ingredients including the squash. Wipe out the frying pan, heat the remaining oil and pour in the egg mixture. Cook over a medium–high heat until golden underneath, then place under a hot grill until set. Invert onto a plate to serve.
