Ingredients

Quantity Ingredient
500ml vegetable or chicken stock
1/2 teaspoon dried wakame
80g firm tofu, cubed
1 x 100g head of bok choy, leaves trimmed and separated

Method

  1. Place the stock in a pan, add the soy. Bring to the boil then set aside for 10 minutes. Meanwhile, soak the wakame in hot water for 10 minutes then drain and cut away any tough spines. Add the wakame, tofu and bok choy to the bowl. Pour the stock into the bowl and serve immediately.
