Ingredients

Quantity Ingredient
70g red quinoa, rinsed and drained
1/2 egg
a large mixed handful of kale, mustard leaves and beet greens, finely sliced
1 spring onion, finely sliced
1/2 green jalapeno
1 tablespoon chopped coriander
2 tablespoons extra virgin olive oil
2 tablespoons lime juice
1/2 garlic clove, crushed
sea salt flakes
freshly ground black pepper
2 tablespoons toasted peanuts, roughly chopped

Method

  1. Cook the quinoa according to the packet instructions. Drain (if necessary) and set aside. Bring a small pan of water to the boil, lower in the egg and cook for 6 minutes. Transfer to cold water, then peel and leave whole. Steam the mixed vegetables until just tender. Place all the remaining ingredients except the peanuts in a screw-top jar and shake to combine. To serve, place the quinoa in a bowl and top with the steamed vegetables. Halve the egg and add to the bowl. Spoon over the dressing, scatter with the peanuts and serve immediately.
