Ingredients

Quantity Ingredient
1 red onion, chopped
1 teaspoon ground cumin
300g cauliflower, cut into florets and stalks chopped
1 litre vegetable stock
240g cooked or canned red kidney or pinto beans, drained and rinsed
creme fraiche, to serve

Method

  1. Heat the oil in a pan and cook the onion for about 8 minutes. Add the cumin and the cauliflower and cook over a medium-high heat, stirring, until the cauliflower starts to brown. Add the stock and beans. Reduce the heat and simmer uncovered until the cauliflower is tender. When the cauliflower is cooked, cool slightly then carefully blitz the soup with a food processor or hand blender. Warm through over a medium heat, add salt and pepper to taste and top with crème fraîche before serving.
