Ingredients

Quantity Ingredient
125g sweet cherries, pitted, fresh or frozen
1 tablespoon runny honey or agave syrup
1 tablespoon lemon juice
2 basil leaves
1-2 slices seedy bread
2-3 tablespoons labneh, (cream cheese will work as an alternative)
sesame seeds, for sprinkling

Method

  1. Place the cherries, honey or agave syrup and lemon juice in a pan and lightly crush with a potato masher. Bring to a gentle simmer, then reduce the heat to low, cover and cook for 5 minutes. Tear the basil leaves into the pan and gently simmer uncovered for a further 5 minutes until the juices reduce to a syrup. Meanwhile, toast the bread and spread with the labneh. To serve, spoon the cherries and sauce over the labneh and sprinkle with sesame seeds.
