Ingredients

Quantity Ingredient
unsalted butter, for buttering and spreading
1 orange, grated zest
80g dried figs, chopped
3 large eggs, lightly beaten
350g almond or dairy milk
50ml double cream
1 teaspoon ground cinnamon
2 teaspoons vanilla extract
150g bananas, mashed until smooth

Method

  1. Preheat the oven to 180°C and generously butter a 1.2 litre baking dish. Butter one side of each slice of bread and cut each slice in half. Arrange half the bread in the bottom of the baking dish buttered-side up and scatter half the orange zest and half the figs on top. Arrange the remaining bread on top and scatter over the remaining zest and figs. Whisk together the eggs, milk, cream, cinnamon, vanilla and banana, and pour over the bread. Bake for 30 minutes until golden. Serve warm.
