Ingredients

Quantity Ingredient
700g tomatoes in assorted varieties,sizes and colours
1 1/2 tablespoons vincotto or balsamic vinegar, (concentrated, slow-cooked grape must from Puglia in Italy)
60ml olive oil
2 teaspoons red wine vinegar
1 small handful lovage or celery leaves
pepper

Method

  1. Slice the large tomatoes into crosswise rounds and halve or quarter the small ones. Arrange them in a salad bowl and sprinkle with salt, then set aside for 10 minutes. In the meantime, combine the vincotto or balsamic vinegar, oil and red wine vinegar. Sprinkle the lovage or celery leaves over the tomatoes and pour over enough dressing to coat them. Add salt and pepper, olive oil or vincotto to taste. Serve immediately.
