Ingredients

Quantity Ingredient
300g prawns, cooked and shelled
150g cucumber, deseeded and diced
1 mango, flesh scooped out and cut into matchsticks
8-12 crisp salad leaves, such as romaine
1 handful mint leaves, snipped
1 handful coriander, chopped
1 medium red chilli, thinly sliced
1 quantity Thai vinaigrette

Method

  1. Gently mix all the ingredients, except for the dressing, in a shallow dish. Pour over enough dressing to coat the ingredients. Serve immediately
