Ingredients

240ml cider vinegar
2 tablespoons caster sugar
160g cucumber, halved then finely sliced
1 small red onion, halved then finely chopped
320g spelt or pearl barley, cooked and rinsed
12 cherry tomatoes, halved
4 tablespoons extra-virgin olive oil
2 tablespoons lemon, Juiced, or more as desired
160g slices of smoked salmon, cut into thin strips
2 tablespoons chopped dill, plus a few sprigs to garnish
salt
pepper

Method

  1. In a salad bowl, mix the vinegar with the sugar, then add the cucumber and onion. Set aside for 30 minutes then drain. Put the spelt or barley and the tomatoes in a shallow dish. Add the olive oil and lemon juice, followed by the smoked salmon, the drained cucumber and onion, and finally the dill. Add extra lemon juice and salt and pepper to taste. Sprinkle a few sprigs of dill on top and serve immediately.
