Ingredients

Quantity Ingredient
6 celery sticks, cut diagonally
4 handfuls flat-leaf parsley leaves
2 handfuls salad leaves
2 quantities Simple vinaigrette
4 soft-boiled eggs
4 tablespoons toasted hazelnuts, crushed
4 tablespoons dried breadcrumbs
4 tablespoons pressed mullet roe, grated, or more as desired

Method

  1. Divide the celery, parsley and salad leaves between shallow dishes and add enough dressing to coat them. Arrange the eggs on top and sprinkle with hazelnuts, breadcrumbs and fish roe. Serve immediately
