Ingredients

Quantity Ingredient
4 large romaine lettuce leaves, finely sliced
or 8 small romaine lettuce leaves, finely sliced
4 cavolo nero leaves, central rib removed finely sliced
150g cooked chicken, thinly sliced
8 assorted cherry tomatoes, halved
80g raw sweetcorn kernels
1 slice streaky bacon, diced and grilled
2 hardboiled eggs, halved
1 avocado
60g goat’s cheese, crumbled
2 quantities Simple vinaigrette
1/2 tablespoon honey or agave syrup

Method

  1. Lay the lettuce and cavolo nero on a serving dish or on separate plates, then arrange the chicken, tomatoes, sweetcorn, bacon and eggs on top. Dice the avocado and add it to the salad. Finish by sprinkling the goat’s cheese on top. Mix the vinaigrette and honey (or agave syrup), and pour on top, to taste. Serve immediately.
