Ingredients

Quantity Ingredient
3 quantities Simple vinaigrette
3 tablespoons pesto, more as desired
450g red or white quinoa, cooked, rinsed and drained
3 spring onions, finely chopped
15g coriander, snipped
15g dill, chopped
15g mint leaves, snipped
4 tablespoons pine kernels, toasted
75g feta
salt
pepper

Method

  1. Mix the vinaigrette and pesto. Gently mix the quinoa, spring onions, herbs, and half the feta together in a salad bowl. Pour over enough of the dressing to coat the ingredients, season with salt and pepper. Sprinkle the remaining feta and the pine kernels on top. Add more salt and pepper or dressing to taste.
