You may need to cook the spinach in a couple of batches, depending on the size of your saucepan.

Ingredients

Quantity Ingredient
400g young spinach
40g unsalted butter
sea salt
freshly ground black pepper
1/2 teaspoon freshly grated nutmeg, or to taste

Method

  1. Wash the spinach in several changes of cold water to remove all traces of dirt. Put the spinach into a medium saucepan with just the water clinging to the leaves after washing. Allow to wilt over a low heat, stirring from time to time. Once all the spinach has wilted, drain in a colander, pressing firmly with the back of a wooden spoon to remove excess water.
  2. Melt the butter in the pan, add the spinach and toss until it is really well coated. Season with salt, pepper and nutmeg to taste, then serve.
