Midweek suppers are always casual in our home – simple comforting food to satisfy everyone after a tiring day’s work. If we have a dessert, it is likely to be something very straightforward and easy to prepare. One course is often enough, though usually we will have a salad – eaten after the main course rather than with it – right through the year, not just in summer. Leaves carefully dressed should be eaten on their own – to enjoy their particular taste, but equally so as not interfere with the flavours of the primary dish.

Never underestimate the beauty of ripe seasonal fruit to end a meal. In its most perfect incarnation, it cannot be surpassed. One flawless peach, limey fragrant slices of mango, full-flavoured autumn raspberries, or the sweet juice that drips from a slice of watermelon on a warm summer’s day – all so enticing and breathtaking in their simplicity.
