When you are eating later in the evening – perhaps after the theatre or cinema – it is important to have something simple and light. Of course, it often seems easier just to grab something in a restaurant on the way back, but a late evening supper at home is quieter, less frenetic and more engaging. Planning is key and as far as possible the preparation needs to be done in advance. So, when you return, there is little to do other than to finish off and warm through whatever you are serving, dress a salad and – if the mood takes you – lay out one perfectly ripe cheese and a little fruit or dessert.

The most elegant food of all is often the simplest – where less is more. Keep the table low key, too. Supper in the kitchen is comforting and casual and lends itself perfectly to this kind of eating. The memory of a wonderful meal does not simply comprise the food that was eaten, but also the friends it was spent with, the place it was eaten in… simplicity allows you to remember it all just that much more vividly.
