I’ve always preferred poached eggs and ham to the more traditional eggs and bacon. Good-quality ham – sliced fairly thickly and gently browned in unsalted butter – has a sweeter flavour and a more interesting texture, which suits the delicate nature of poached eggs. The perfect poached egg can be elusive, but follow this method and you should be happy with the end result.

Ingredients

200g piece of leg ham
4 organic free-range large eggs
1 teaspoon vinegar
25g unsalted butter
freshly ground black pepper

To serve

Slow-roasted tomatoes, or grilled tomatoes
a little chopped parsley

Method

  1. Cut the ham, using a sharp knife, into slices about 3mm thick; allow 2–3 slices per person.
  2. To poach the eggs, bring a fairly shallow, wide pan of water to a simmer with the vinegar added. One at a time, break the eggs into a cup and slip very gently into the simmering water. As soon as the last egg is in the pan, put the lid on and turn off the heat. Leave the eggs to cook in the residual heat: allow 3½ minutes for eggs that are still soft in the centre; 4 minutes for a slightly firmer egg.
  3. Meanwhile, heat the butter in a non-stick frying pan until it begins to foam. Add the ham slices with a good grinding of black pepper and cook until lightly browned underneath, then turn and brown the other side.
  4. When the eggs are ready, one at a time carefully remove with a slotted spoon, drain on kitchen paper and place on warm plates. Lay the ham alongside and serve, with grilled or slow-roasted tomatoes sprinkled with a little chopped parsley.
