Biscuits are really not difficult to make and the effort is always appreciated. I like chocolate biscuits to be soft and gooey – almost sticky – and I prefer to eat them still just a little warm. As they emerge from the oven, the smell is irresistible – enough to make anyone hungry. You’ll find it difficult to eat just one…

Ingredients

Quantity Ingredient
100g plain flour
1/4 teaspoon baking powder
good pinch salt
200g unsalted butter
135g soft brown sugar
25g caster sugar
1 vanilla pod, split lengthways
1 organic free-range large egg
3 teaspoons milk
90g rolled oats
150g raisins
175g good-quality dark chocolate, chopped

Method

  1. Preheat the oven to 160°C. Line two or three large baking trays with baking parchment. Sift the flour, baking powder and salt together into a bowl and set aside.
  2. Using an electric mixer, beat the butter and both sugars together until well combined. Scrape in the seeds from the vanilla pod and continue to beat until pale and thick. Now beat in the egg and milk, followed by the flour mixture.
  3. Finally fold in the oats, raisins and chopped chocolate, using a large metal spoon or spatula.
  4. Spoon the dough into mounds on the prepared baking trays, making sure that they are evenly spaced and well apart to allow room for spreading. Bake in the oven for 15 minutes until golden.
  5. Leave the biscuits on the trays for a few minutes to firm up, then transfer to a wire rack to cool. Serve still slightly warm.
