The flavour of these mushrooms mixed in with the mashed potatoes is simply a delight. In one kitchen I used to work in, we would serve this rolled up in soft tunnbröd, which was then pan-fried. It is also great served with meat. A rather unfamiliar pairing that is common throughout Nordic countries – and one I have been forced to come to terms with – is mushrooms and fish. Try it for yourself.

Ingredients

1kg starchy potatoes, peeled
200g chanterelle mushrooms, brushed clean, the larger ones torn in half
2 teaspoons chopped thyme
1 tablespoon rapeseed oil
25g salted butter
white pepper
300ml full-cream milk

Method

  1. Boil the potatoes in a large saucepan of salted water for 12–15 minutes, or until soft.
  2. Meanwhile, sauté the mushrooms and thyme in the oil and half the butter in a frying pan over a medium heat. Season well with salt and white pepper. Once the mushrooms have softened and released some of their liquid, remove the pan from the heat and set aside.
  3. Put the milk and the remaining butter in a small saucepan. Season, then gently warm over low heat until the milk is steaming. Do not let it boil.
  4. Drain the potatoes well and return them to the hot pan to help them dry out. For best results, put the potatoes through a ricer, alternatively, use a masher. Mix the buttery milk mixture into the potatoes using a wooden spoon until it forms a smooth purée. Stir through the mushrooms, check the seasoning and serve.
