Ingredients

Quantity Ingredient
100g unsalted butter
270g caster sugar
100ml sunflower oil
1 teaspoon ammonium carbonate
or 2 teaspoons baking powder
240g plain flour
1 teaspoon ground cardamom

Method

  1. Preheat the oven to 150°C and line a baking tray with baking paper. Beat the butter and sugar for 5 minutes, until pale and fluffy. Gradually mix in the oil.
  2. Add the ammonium carbonate to 125 g flour and combine with the butter mixture. Work in the remaining flour and cardamom.
  3. Divide the dough in half and shape each piece into 2 even logs. Slice 20 discs from each, and then roll each disc into a ball. Place on the lined baking tray and cook for 20 minutes, until they have puffed up and have some visible cracks across the top.
