Soups are an essential food in Turkey, and can be consumed at all times of the day — maybe as a meal in their own right, or as part of a larger feast. Most Turkish homes would always start a meal with a bowl of soup. No matter how bare the cupboard, every Turkish woman can find something to make soup from.

In the summer we drink cold soup — perhaps a yoghurt and cucumber soup with a few herbs. In winter it could be another yoghurt soup, hot and tasty.

This is my favourite soup, and I will share my recipe with you.

Ingredients

110g whole wheat
500g plain yoghurt
2 tablespoons plain flour
pinch sea salt
75g butter
3 tablespoons dried mint

For serving

2 garlic cloves, mashed with a pinch of sea salt
crusty bread
4 spring onions, sliced

Method

  1. Put the wheat in a small saucepan and cover with water. Bring to the boil, then reduce the heat and simmer until soft, about 45 minutes. Strain and set aside.
  2. In another saucepan, combine the yoghurt, flour, salt and 750 ml water. Whisk really well and place over a high heat, stirring constantly in the same direction until the mixture comes to the boil — if you don’t do this, it will curdle. Once it boils, stop stirring and reduce the heat to low. Add the wheat to the soup, then simmer gently for 10–15 minutes, or until thickened.
  3. Meanwhile, in a small frying pan, melt the butter over a low heat and add the dried mint. Fry for a few minutes, until fragrant.
  4. Turn off the soup. Just before serving, stir in the mashed garlic. Pour the soup into individual serving bowls, then drizzle the mint butter over.
  5. To eat, break off a bit of crusty bread, place some spring onion in the middle and take a bite, followed by a spoonful of soup. Mmm mmm.
  6. On a hot summer’s day, you can serve this soup chilled for lunch or dinner
