This is a celebration soup. The stock is made from the parts of the animal that might otherwise be wasted — the head, the bones, the offal. The soup can be eaten for lunch or dinner … depending on when you are getting married!

Ingredients

500g beef neck chops
1 tablespoon white wine vinegar
1 carrot, finely diced
1 large onion, finely diced
100g butter, melted
50g plain flour
1 tablespoon turkish red pepper paste, (see note)
crusty bread, to serve

Terbiyeli

Quantity Ingredient
1/2 lemon, juiced
2 free-range egg yolks
125ml milk

Method

  1. Put the chops in a stockpot with the vinegar and 1.5 litres water. Add the carrot and onion and bring to the boil over a high heat. Reduce the heat to medium and cook, uncovered, until the meat is falling off the bones, about 1½ hours. Take the stockpot off the heat and allow to cool.
  2. When the meat is cool enough to handle, break it into bite-sized pieces and discard the bones. Strain and reserve the stock. You will need 1.25 litres of stock; if there is not quite enough, top it up with water so you have the right quantity.
  3. In a clean saucepan, melt the butter over medium heat, then add the flour and red pepper paste. Stir for a few minutes, to cook out the raw flour taste. Gradually stir the reserved meat stock into the flour mixture and bring up to a simmer.
  4. For the terbiyeli, whisk the lemon juice, egg yolks and milk in a small bowl. Pour in 60 ml of the hot meat stock, mixing well. Season with sea salt and freshly ground black pepper, then pour this mixture back into the stockpot. Stir and add the meat pieces. Cook for a few more minutes, until the meat is heated through and the soup has thickened slightly.
  5. Serve immediately, with crusty bread.

Note

  • Turkish red pepper paste, or biber salcasi, is a thick, hot, spicy, dark red paste made from red capsicums and chillies. You’ll find it in Middle Eastern grocery stores.
