When you have a kebab, or any barbecued meats, or Turkish pides, this is the salad to serve. It is so quick to prepare, so fresh in taste, and really complements the flavours of different meats.

Ingredients

Quantity Ingredient
1 red onion, thinly sliced
15g finely chopped flat-leaf parsley
2 tablespoons sumac, (see note)
pinch sea salt

Method

  1. This salad is best made just before serving. Just put all the ingredients in a bowl, rub together and serve!
  2. If you don’t like the smell of raw onion on your breath, you can rinse the onion slices before using them in the salad.

Note

  • Sumac is a tiny reddish-purple berry that grows throughout the Middle East. The berries are dried, then crushed and added to dishes for a tangy, lemony zing. Ground sumac is available from spice shops and Middle Eastern grocery stores.
