Ingredients

Quantity Ingredient
200g walnut halves
3 free-range eggs
280g dark brown sugar
250ml strong brewed tea
180g unsalted butter, melted
1 tablespoon ground cinnamon
300g self-raising flour

Method

  1. Preheat the oven to 160°C. Butter and flour a 27 cm springform cake tin.
  2. Finely chop half the walnuts, and cut the remaining walnuts into chunks, keeping them separate.
  3. Place the eggs and sugar in a bowl. Using an electric mixer, beat well, until fluffy. Add the tea, melted butter and cinnamon and mix well. Add the flour and finely chopped walnuts and continue mixing well.
  4. Pour the batter into the cake tin, then sprinkle with the walnut chunks. Bake for 35–40 minutes, or until a skewer inserted into the middle of the cake comes out clean.
  5. Leave to cool before removing from the tin. This cake is best enjoyed the same day it is baked.
