Ingredients

Quantity Ingredient
150g unsalted butter
300g caster sugar
5 free-range eggs
200g finely ground pistachio nuts
1 tablespoon baking powder
1 orange, zested
4 unsprayed, pesticide-free roses, petals
sifted icing sugar, or extra ground pistachio nuts, for dusting

Method

  1. Preheat the oven to 160°C. Butter a 27 cm springform cake tin.
  2. In a food processor, blend the butter and sugar together, then add the eggs one at a time, blending after each addition. Add the ground pistachios, baking powder and orange zest and blend until just combined.
  3. Pour half the batter into your cake tin. Spread the rose petals over the batter and pour the remaining mixture over them. Bake for 40 minutes, or until a skewer inserted into the middle of the cake comes out clean.
  4. Leave to cool before removing from the tin. Dust with icing sugar or some extra ground pistachios and serve with love.
  5. This cake is best enjoyed the same day it is baked.
