Enjoyed throughout the Middle East, this classic dip is delicious with some Bulgarian feta spinkled over the top. It can be made up to a week ahead; the flavours will deepen.

Ingredients

Quantity Ingredient
2 tablespoons biber salcasi, (see note)
125g walnuts, roughly chopped
1/2 lemon, juiced
3 garlic cloves, crushed
2 tablespoons crushed dried red chillies
125ml extra virgin olive oil

Method

  1. Mix all the ingredients together in a bowl, then cover and refrigerate until needed.
  2. Serve cold, with hot Turkish bread.

Note

  • Biber salcasi, or Turkish red pepper paste, is a thick, hot, spicy, dark red paste made from chilli peppers. You’ll find it in Middle Eastern grocery stores.
