Ingredients

Quantity Ingredient
500g vine-ripened tomatoes
1 lebanese cucumber
1 red onion
2 long green chillies
1/2 bunch flat-leaf parsley
100ml olive oil
1 lemon, juiced
sea salt
freshly cracked black pepper

Method

  1. Cut the tomatoes, cucumber and onion into 2 cm squares and place in a large bowl. Thickly slice the chillies and add to the bowl.
  2. Add the parsley, olive oil and lemon juice and toss to combine. Season to taste with sea salt and black pepper.
