Parsley salad with lemon juice

Ingredients

Quantity Ingredient
1 red onion
2 tablespoons lemon juice
2 tablespoons sumac
pinch sea salt
2 handfuls flat-leaf parsley, chopped

Method

  1. Cut the onion in half lengthwise and then into thin slices.
  2. Sprinkle the onion with the lemon juice, sumac and sea salt and mix with your hands, rubbing together. Mix in the parsley, and serve.

Note

  • I love to serve this with barbecued chicken, chargrilled tomatoes and green capsicums, flatbread and fresh mint. It is also good with barbecued meat or fish.
