Ingredients

Quantity Ingredient
1kg small okra
80g butter
2 onions, diced
2 ripe tomatoes, diced
2 green chillies, chopped
sea salt
freshly cracked black pepper
1 lemon, juiced

Method

  1. Trim off the top of the okra and place it in a bowl of water.
  2. Melt the butter in a frying pan over medium heat. Cook the onion for 10–15 minutes, or until soft but not browned. Add the tomato, chilli, okra and 125 ml water. Season with sea salt and black pepper and simmer for 5–10 minutes, or until the okra is tender. Stir in the lemon juice.
  3. Serve the okra hot or cold.

Note

  • This is delicious with braised lamb or chicken.
