Ingredients

Quantity Ingredient
80g pistachios
3 tablespoons olive oil
300g carrots, grated
250g Garlic yoghurt
2 tablespoons toasted sesame, seeds

Method

  1. Preheat the oven to 160°C. Spread the pistachios on a baking tray. Roast for 10 minutes, or until fragrant. Crush the cooled pistachios in a food processor.
  2. Heat the olive oil in a frying pan over medium heat. Cook the carrot for 5–6 minutes, or until soft. Set aside to cool.
  3. Fold the carrot through the garlic yoghurt and sprinkle it with the pistachios and sesame seeds.
