Braised broad beans with garlic yoghurt

Ingredients

Quantity Ingredient
125ml olive oil
1 large onion, diced
1.5kg broad beans, podded and peeled
sea salt
250g Garlic yoghurt
dill sprigs, to serve
extra-virgin olive oil, to serve
crusty bread, to serve

Method

  1. Heat the olive oil in a frying pan. Cook the onion over medium heat for 10–15 minutes, or until the onion is soft but not browned. Add the broad beans and season with the sea salt. Cover and simmer for 5–10 minutes, or until the beans are tender. Remove from the heat and transfer to a serving bowl.
  2. Spoon the garlic yoghurt over the broad beans. Sprinkle with the dill sprigs and drizzle with a little extra-virgin olive oil. Serve warm or cold, with crusty bread.
