Ingredients

Quantity Ingredient
100g dried lima beans
250ml olive oil
125ml lemon juice
1 onion
50g english mustard
1/2 teaspoon chilli powder

Method

  1. Soak the lima beans in water for 5 hours. Drain and rinse, then place in a saucepan and cover with cold water. Bring to the boil and cook for 1 hour, or until tender. Drain and rinse well.
  2. Put the beans in a food processor, add the remaining ingredients and blend to a thick purée.
