Ingredients

Quantity Ingredient
1 lamb’s liver
1/2 cup cornflour
1 tablespoon cayenne pepper
1 tablespoon sea salt
250ml olive oil

Method

  1. Skin and clean the liver and cut it into 1 cm square pieces.
  2. Combine the cornflour, cayenne pepper and sea salt in a bowl.
  3. Heat the olive oil in a frying pan over high heat. Toss the liver in the cornflour mixture and fry in small batches for 5 minutes each batch, or until golden. Serve the liver hot or cold as part of the meze.
