Turkish-style sardines with tomato salad

Ingredients

Quantity Ingredient
12 sardines, cleaned
3 tablespoons sunflower oil
2 vine-ripened tomatoes, diced
1 small red onion, diced
2 handfuls flat-leaf parsley, roughly chopped
125ml extra-virgin olive oil
1 lemon, juiced
sea salt
lemon wedges, to serve

Method

  1. Remove the heads from the sardines. Wash thoroughly, then drain on paper towel.
  2. Heat the sunflower oil in a non-stick frying pan. Cook the sardines for 2 minutes on each side over high heat, or until golden.
  3. Put the tomato, onion, parsley, olive oil and lemon juice in a bowl and gently toss to combine. Season with sea salt.
  4. Divide the salad between four plates and arrange the sardines on top. Serve with lemon wedges.
