Garlic chilli squid with saffron

Ingredients

Quantity Ingredient
300g cleaned squid
3 tablespoons sunflower oil
3 garlic cloves, chopped
1 red chilli, finely chopped
1 handful flat-leaf parsley, chopped
1/2 teaspoon saffron threads
sea salt
1 handful rocket
100ml extra-virgin olive oil
1 lemon, juiced

Method

  1. Cut the squid into bite-sized pieces.
  2. Heat the sunflower oil in a frying pan until very hot. Cook the squid in the hot oil for 1–2 minutes, or until opaque. Add the garlic, chilli, parsley and saffron and season with sea salt. Cook, stirring, for a few minutes more, until the squid is lightly browned.
  3. Toss the rocket with the olive oil and lemon juice, then arrange in the centre of 4 serving plates. Pile the squid on top and serve immediately.
