Corn fritters with polenta

Ingredients

Quantity Ingredient
1 corn cob
1 onion, diced
1/2 cup polenta
4 handfuls flat-leaf parsley, chopped
2 eggs
1 tablespoon baking powder
sea salt
freshly cracked black pepper
250ml sunflower or canola oil

Method

  1. Cut the kernels off the corn cob and place in a bowl. Add the onion, polenta, parsley, eggs and baking powder and season with sea salt and black pepper. Stir for a few minutes, until the batter is well combined.
  2. Heat the oil in a frying pan over high heat. Drop 2 tablespoons of the batter at a time into the hot oil and cook for 3–4 minutes on each side, or until golden. Drain on paper towels. Serve hot or cold.
