Ingredients

Quantity Ingredient
1kg chicken mince
1 large onion, finely diced
2 handfuls flat-leaf parsley, chopped
4 tablespoons Dukkah
2 tablespoons chilli flakes
sea salt
freshly cracked black pepper

Method

  1. Put the chicken mince in a large bowl. Add the diced onion, parsley, dukkah and chilli flakes. Season with sea salt and black pepper. Using your hands, mix until well combined. Refrigerate for several hours or overnight to allow the flavours to develop.
  2. Roll walnut-sized pieces of the chicken mixture into balls and gently flatten them. Cook the kofte on a preheated barbecue over high heat for 2–3 minutes on each side, or until golden. Drain on paper towels. Serve hot.

Note

  • Chicken kofte are delicious with sumac and parsley salad. They can also be pan-fried in a little oil.
