Ingredients

Quantity Ingredient
250g dried lima beans
125ml extra-virgin olive oil
1 large onion, diced
300g tomatoes, finely diced
sea salt
freshly cracked black pepper
3 tablespoons extra-virgin olive oil, extra, to serve

Method

  1. Soak the lima beans overnight in cold water. Drain and rinse the beans, place in a saucepan and cover with plenty of water. Bring to the boil and cook for 1–1 1/2 hours, or until the beans are soft. Drain and set aside.
  2. Heat the olive oil in a saucepan and gently sauté the onion over low heat until soft, about 10 minutes. Add the tomatoes and drained lima beans and cook over low heat for about 1 hour, or until thickened. If the mixture becomes dry, add a little stock or water. Season to taste with sea salt and black pepper. Stir in the extra olive oil to serve.
