Poached figs with walnuts and cream

Ingredients

Quantity Ingredient
500g turkish dried figs
50g walnuts
2 tablespoons sugar
1/2 lemon, juiced
cream or yoghurt, to serve

Method

  1. Soak the dried figs in hot water for 1 hour.
  2. Meanwhile, preheat the oven to 160°C. Roast the walnuts on a baking tray for 10 minutes, or until fragrant.
  3. Drain the figs and transfer to a saucepan. Add the sugar, lemon juice and enough water to just cover the figs. Bring to a gentle simmer and cook for 10 minutes, or until the figs are just soft. Remove the figs with a slotted spoon.
  4. Gently cook the poaching liquid for about 10 minutes, until reduced and syrupy, then set aside until cool.
  5. Once the figs are cool enough to handle, split them open at the base. Push a walnut inside each fig. Stand the figs on serving plates and drizzle with the syrup. Serve with cream or yoghurt.
