Ingredients

Quantity Ingredient
3 eggs
1 cup sugar
140g unsalted butter, melted
3 tablespoons olive oil
250g greek-style plain yoghurt
3 oranges, grated zest
1/2 cup semolina
1 teaspoon baking powder
2 cups self-raising flour
3 tablespoons crushed pistachios

Method

  1. Preheat the oven to 160°C. Grease and flour a 27 cm springform tin.
  2. Beat the eggs and sugar together until pale, then beat in the butter and olive oil. Add the yoghurt, orange zest, semolina and baking powder and mix well. Fold in the flour.
  3. Pour the mixture into the cake tin and sprinkle the pistachios on top. Bake for 40 minutes, or until a skewer inserted into the cake comes out clean. Leave in the tin to cool. Serve the cake at room temperature.
