Lime syrup

Ingredients

Quantity Ingredient
250ml lime juice
1 cup sugar
120g unsalted butter
200g sugar
2 limes, zested and juiced
3 eggs
1 cup polenta
250g greek-style plain yoghurt
2 cups self-raising flour
cream or yoghurt, to serve

Method

  1. Preheat the oven to 160°C. Grease and flour a 27 cm springform tin.
  2. To make the lime syrup, combine the lime juice and sugar in a saucepan. Bring to the boil and cook until the sugar dissolves, about 5 minutes. Set aside to cool.
  3. Beat the butter, sugar and lime zest in a food processor until pale. Add the eggs, one a time, with the motor running. Beat well. Blend in the lime juice, polenta and yoghurt, then fold in the flour.
  4. Pour the mixture into the cake tin. Bake for 40 minutes, or until a skewer inserted into the cake comes out clean.
  5. Pour the cold syrup over the hot cake. Leave in the tin to cool. Serve the cake at room temperature, with cream or yoghurt.
