Scrambled eggs with feta and parsley

Ingredients

Quantity Ingredient
4 eggs
100ml cream
pinch sea salt
3 tablespoons chopped flat-leaf parsley
20g butter
50g bulgarian feta
turkish bread, to serve
sucuk (turkish sausage), to serve, (see glossary)

Method

  1. Gently whisk the eggs with the cream, salt and parsley.
  2. Melt the butter in a non-stick frying pan over low heat. Pour in the egg mixture and gently fold until just set, about 5 minutes.
  3. Crumble the feta over the eggs and serve immediately, with toasted Turkish bread and pan-fried sucuk.
