Ingredients

Quantity Ingredient
50g butter
250g button mushrooms, sliced
10g dried porcini mushrooms, broken into small pieces
3 garlic cloves, chopped
1 large handful flat-leaf parsley, chopped
sea salt
freshly cracked black pepper
125ml cream
1 avocado, sliced
Turkish bread, to serve

Method

  1. Melt the butter in a frying pan over high heat. Add the button mushrooms and porcini mushrooms and cook, stirring constantly, for 10–15 minutes, or until well browned.
  2. Add the garlic and parsley and season with sea salt and freshly cracked black pepper. Cook until the mushrooms are soft, then pour in the cream and stir over low heat for 5 minutes, or until thickened.
  3. Serve the mushrooms hot, with the avocado and toasted Turkish bread.
