Caramelised onion with eggs

Ingredients

Quantity Ingredient
2 large red onions
80g unsalted butter
sea salt
freshly cracked black pepper
4 eggs
crusty bread, to serve

Method

  1. Cut the onions in half and then into slices. Melt the butter in a large frying pan and cook the onion over low heat, stirring occasionally, for 10–15 minutes, until brown and soft. Take care not to burn the onion. Season with sea salt and freshly cracked black pepper and mix thoroughly.
  2. Make four indentations in the onion with the back of a spoon, and crack an egg into each one. Cover and cook over low heat until the egg whites are cooked through but the yolks are still soft.
  3. Serve the caramelised onion and eggs immediately, with crusty bread and black tea.

Variation

  • Try cooking one or two chopped long green chillies with the eggs or sprinkling them over the top of the finished dish.
