Cinnamon apple fritters

I recommend using Granny Smith apples in this recipe, but they will still turn out well if you use a different variety.

1/2 cup plain flour
1 pinch salt
1 egg, separated
1/3 cup milk
2 granny smith apples
1/4 cup vegetable oil, for frying
2 tablespoons raw sugar, for sprinkling
1 teaspoon ground cinnamon, for sprinkling

  1. Sift the flour and salt into a mixing bowl. Add the egg yolk then pour in the milk. Whisk together to form a smooth batter. Try to make sure there are no lumpy bits.
  2. Tip the egg white into the bowl of an electric mixer and beat until it forms a thick white foam. It should be thick enough to form soft floppy peaks if you lift the beater out.
  3. Ask a grown-up to help you tip the egg white into the batter. Use a large kitchen spoon to stir them together, working from the middle of the bowl. Instead of stirring round and round, try to cut downwards through the mixture and then turn it over (this is called ‘folding’). The batter should be smooth, thick and shiny.
  4. Ask a grown-up to help you peel and core the apples (this can be tricky, but there are also special machines that do both tasks at the same time). Slice the apples into ½ cm rings – you should be able to get about 8 rings from each apple.
  5. Dip 3 apple rings into the batter and use tongs to turn them so they are coated all over.
  6. Ask a grown-up to heat the oil in a frying pan over a low–medium heat. When it is just hot, place the 3 apple rings in the oil. Ask a grown-up to do this for you and stand well back in case the oil spatters. Fry the fritters for 2 minutes on each side until the apple is soft and the fritters are golden.
  7. Ask a grown-up to help you lift the fritters out of the pan and onto paper towel to drain, then lift them onto a warm serving plate. Repeat with the remaining apple rings.
  8. Mix the sugar with the cinnamon in a small bowl. Sprinkle onto the hot fritters and serve them straight away.
