French toast & mushrooms

Ingredients

Quantity Ingredient
200g seasonal mushrooms
1 garlic clove
4 sprigs parsley
2 eggs
200ml milk
salt
pepper
4 slices artisan country bread
4 tablespoons grated cheese
1 tablespoon oil

Method

  1. Wash and dry the mushrooms. Chop the garlic clove and parsley. Beat the eggs and milk with a pinch of salt and pepper. Dip the slices of bread in the mixture and place them on a baking tray lined with baking parchment. Add 1 tablespoon of grated cheese to each slice, then put under the grill for 15 minutes. Sauté the mushrooms in the oil with the chopped garlic in a frying pan over a high heat for 10–15 minutes. When cooked, add the chopped parsley. Put the cooked mushrooms on the toast and season with salt and pepper before serving.
