Ingredients

Quantity Ingredient
4 small tomatoes
1 apple
2 teaspoons curry powder
1 tablespoon honey
2 tablespoons olive oil
4 slices multigrain bread
100g ricotta
salt
pepper

Method

  1. Cube the tomatoes and apple. Simmer gently in a frying pan or saucepan for 15 minutes with 1 teaspoon of curry powder, the honey and olive oil. Spread the slices of bread with the apple sauce. Crumble the ricotta on top, sprinkle with the remaining curry powder, and season with salt and pepper before serving.
